Dinnertime Dilemmas

Does anybody else have difficulty coming up with idea and cooking dinner in the summertime? In the colder months I cook a full meal at least four out of the seven days in a week and eat leftovers the other three days. But most of these meals are soups or hearty pasta dishes. Much too heavy for the summer.

But ever since the end of April I'm having a hard time coming up with meal ideas. We've been having a lot of hot dogs, brats, hamburgers and chicken on the grill but I daresay I'm already tired of all that meat.

So if any of you out there have some good summertime recipes that don't involve a grill I'd love to hear them. I don't mind using the good old pots and pans as long as the end product is a bit lighter than what we've been used to.

  1. Here's my list Jenny:

    1. gazpacho
    2. rice and bean burritos
    3. grilled cheese with tomatoes and mushrooms
    4. pizza sticks (like pizza but in stick form. James and Magdalene love them. Just take your dough, cover half in sauce and other fillings, fold dough over, bake, cut in sticks, and dip in extra sauce.)
    5. carmalized onion pizza (delicious and light. add some oregano to your dough, bake until it's a little brown, put olive oil on, add thyme, carmalized onions, and a little bit of mozzarella cheese and bake.)
    6. quesadillas
    7. big salad (for the kids I just take away the lettuce or give them a sandwich)

That's all I can think of right now. I'm tired. Pathetic. It's only 9:15.

  2. I just tried this one last week...
You would think putting salsa on a pizza is weird, but it's pretty tasty!
